Lamb & liver koftas
1kg lamb mince
3 chicken livers (organic grass-fed)
1/4 tsp cumin
1 tsp turmeric
1 garlic clove crushed
1/2 tsp each salt & pepper
1 egg
Salt & pepper to taste
1/2 tbs coconut oil
Protein tzatziki
1 cup plain Greek yogurt
1/2 of a large cucumber grated
2 large garlic cloves crushed
2 tbs hemp protein powder
2 tablespoons extra virgin olive oil
1 tablespoon apple cider vinegar
1/2 teaspoon salt
1 tablespoon minced fresh dill
Salt & pepper to taste
Method koftas
Heat a cast-iron frying pan over medium heat drizzle in coconut oil and then add your livers
Pan fry livers until just cooked through - approximately 2 minutes on each side
Remove livers from the pan and add them to a food processor or blender with cumin, turmeric, garlic, salt & pepper. Blend until completely smooth
In a bowl add the mince, egg and the liver mixture, combine together with your hands and make 'log' like shapes, about as long as your index finger and pierce with a skewer
Assemble the koftas onto your baking tray and put them into the oven for 25 minutes or until cooked
In the meantime, wash the lettuce, cut your vegetables & assemble into a bowl for serving. Once the koftas are cooked assemble them onto your plate
Method for protein tzatziki
Grate the cucumber and put it to the side.
Combine the yogurt, garlic, oil, vinegar, and salt in a large bowl.
Transfer the grated cucumber, protein powder and fresh dill to the yogurt mixture and stir to combine
