Low carb cinnamon & pumpkin muffins

A low carb dessert option for any sweet teeth’s out there. This recipe is a perfect snack option whether you are on the go or even a pre workout snack. What protein powder should I use? Vanilla @trueprotein works the best (vegan or whey). If you don’t want to use pumpkin then sweet potato, mashed banana and apple also works well (needs to be pureed)

1/2 cup almond meal

2 scoops protein powder

1 tsp baking powder

1 tsp cinnamon

1/2 cup almond butter

1/2 cup pureed pumpkin or apple

1/2 cup coconut oil or home made bone broth

2 tbs rolled oats

GLAZE

1/8 cup almond butter

1/8 cup milk of choice

1 tsp lemon juice

METHOD

Preheat the oven to 180 degree and line your muffin trays

In a bowl, combine your dry ingredients and mix well. Add the wet ingredients and then mix until all is fully incorporated

Evenly distribute the batter amongst the muffin liners. Sprinkle the oats on top. Bake for 20 minutes or until cooked. Remove from the oven and allow to cool.

Prepare the cinnamon glaze by combining ingredients together and drizzling over the top of muffins.
